Cold Soba Noodle with Spicy Almond Hazelnut Butter Sauce




Soba is the Japanese name for buckwheat.
(Also it is usually referred as any thin types of noodle that are made from buckwheat flour). Soba noodles could be served either chilled with a sauce, or in hot broth as a noodle soup.








 Inspired by popular peanut butter sauce, I made a spicy almond hazelnut version of it to pair with the chilled Soba. I think the result was surprisingly delicious! The rich, sweet, savory and nutty flavors (did I mention it has lots of fresh spring onions) with a little spicy kick, it complemented the chilled noodles so well.



For dinner, I served it with seared skirt steak (I even used the same sauce on the steak) and steamed green beans as well as a side. It was "delish"!

Chicken Soup (for the hungry Soul)!



Soup is often considered as a starter for people, though, it could be a delicious filling meal on its own (at least my hungry soul thinks so). I decided to incorporate my Chicken Soup with traditional and nontraditional vegetables and rice noodles

Here is the result, the soup is so filling that it could possibly put a poutine to shame!

 

Chicken Soup (with Rice noodle, carrot, sweet onion, purple yam, celery, edamame, garlic, ginger and tons of chicken)
